Cassia & cinnamon
English name: Cinnamon, cassia.
Scientific name: Cortex cinnamoni of Cinnamomum aromaticum.

As one of the oldest known spices, cassia is a spice native to the sunny, rainy and tropical climate regions. It grows wildly in forests. It is also cultivated commercially and became a commodity in Asian and African countries including China, Vietnam, Indonesia, Sri Lanka and Madagascar. However, it only grows in some places of these countries where the climate and soil conditions are favorable to its development.
 
 
Harvest seasons:
 
There are two cassia harvests per year:
- one in spring (from March to May).
- the other one takes place in summer (from August to October) and gives a larger output.
 
Output per year: 10,000 tons.
 
 
Planting areas: 
 
There are four main cultivation regions of cassia in Vietnam: Yen Bai, Tra Mi, Que Phong and Quang Ninh. Each of those regions has different characteristics in terms of nature and ethnic groups. Cassia trees are grown in household gardens and mountainous areas forming concentrative cassia areas. The cultivation method combines agriculture with silviculture.
 
 
Vietnamese cassia:
 
Vietnamese cassia has been considered as a local specialty since the ancient times. It used to be as valuable as the elephant tusks or peafowls and used as a gift. Compared with the China Tung Hing cassia and the Indonesian cassia (Cassia Vera), it has a more intense flavour and aroma and a higher percentage of essential oils. That is why Vietnamese cassia is particularly highly esteemed and brings high export values and creates practical benefits not only for people but also for the state. Cassia is shipped to many countries such as India, Korea, Japan, Singapore, China, Thailand, United States, Bulgaria, Hungary, Holland, Poland, Germany, U.K, etc.
 
 
Harvesting method:
 
Cassia is harvested by cutting down the entire tree, then the cassia bark is peeled from the trunk and branches, and then left to dry. While drying, the bark curls into long quills. It is then cut into different shapes such as tubes, squares, circles, scrapes or ground into powder. Because of its hardness, the bark must be ground in professional mills and the powder is sifted in order to remove stray fragments. The colour varies from light reddish brown for the thin, scraped bark to gray for the thick, unscraped bark. Ground cassia is reddish brown in colour. 
 
 
Applications:
 
Cassia bark (both powdered and in whole, or "stick" form) is used as a flavouring agent for candies, desserts, baked foods and meat; it is specified in many curry recipes. It is used to flavor different beverages including tea. Cassia is also used as a remedy for digestive disorders and respiratory diseases and as an antiseptic; it improves blood circulation by opening up blood vessels. In terms of pharmaceuticals, cassia essential oils and active ingredients are widely used for its therapeutic and medicinal properties. It helps to prevent diabetes by controlling blood glucose and lipid levels.
 
 
Storage:
 
When stored in a cold and dry place, dried cassia can be maintained for a long time.
